Our
Story

The idea was born shortly after the lockdown, Andrea and I spent nearly 3 months of solitude on my family’s property in Beaudesert; building vegetable gardens, cooking on open flame and sometimes doing absolutely nothing. Being given an unexpected amount of time to think about our lives and future, we quickly realised going back to a “normal” lifestyle was not going to be achievable, and so began the dream.

After a conversation with Mum in August 2020, (one that I started at 19 years old upon realising that hospitality was the best career in the world and refused to let anyone tell me otherwise), we discussed the possibilities, recognised the potential and Rosmarino began to take shape. ​

 

Our dedicated back-of-house team, led by Jenna Tonkin with Luca and Tommaso, continues the culinary legacy of former Head Chef Dario Manca. While retaining some of his beloved classics, our menu evolves to reflect our history blended with fresh, exciting flavors. Join us in savouring this mix of tradition and innovation crafted by our talented kitchen crew.

Our former Restaurant Manager, Matteo, played a pivotal role in shaping the service at Rosmarino. Though he has embarked on a new adventure, his significance to us remains unchanged.

We look forward to welcoming you to our little piece of Italy in Fortitude Valley.

Private Dining & Events

Allow us to guide you in organising your upcoming event with the expertise of our dedicated events manager. Whether it's a baby shower or a work function, we're here to assist you every step of the way.

Rosmarino presents three adaptable spaces for your celebration, along with table hire services and custom menu printing and design options.

Private Dining Room capacity: 14 seated max | $1500 min spend | small projector & screen available for up to 12 guests
 

Outdoor Courtyard capacity:  up to 30 seated guests, with a retractable roof that covers up to 18 seated individuals. For larger parties, the 30 seated capacity can be divided into two sections of the courtyard to ensure that all guests remain under cover.
 

Whole Restaurant: up to 40 seated

Set menus are required for groups 7+
